Microgreens are a type of vegetable that is harvested when they are still young, typically between 1-3 inches tall. Unlike sprouts, which are simply germinated seeds, microgreens are grown in soil and given plenty of light. They can be grown indoors or outdoors, and many people find that getting started with microgreens is easy and inexpensive. The simple rule of thumb is smaller seeds can be sowed directly into your planting medium and larger seeds with a heavy husk need to be soaked for a few hours and preferably not longer than 12 hours. Never resoak your seeds. This will mess up germination dramatically. Mist seeds twice a day. remember to add weight for the first few days. Microgreens are ready to harvest when they have their first set of true leaves, which will typically appear within 7-14 days after planting. Once harvested, microgreens can be used in a variety of dishes, from salads to soups to wraps. They can also be enjoyed as a healthy snack right out of the container.
